Comfort Food // Spaghetti Carbonara

Sometimes you just need a bowl of pure comfort food and for me this most definitely has to be Spaghetti Carbonara. I never used to know how to make it from scratch and just had it when I went to restaurants (or in the form of an M&S ready meal) but it's actually not that difficult and just tastes sooo much better when it's home made!



Get your hands on:

500g spaghetti
150g of pancetta (you can buy it already diced)
olive oil
60ml white wine
4 egg yolks
50g parmesan cheese
black pepper & salt to season
60ml double cream
1 slightly crushed garlic clove

First put a pan of water on to boil (you can add a little salt if you wanna) and add the spaghetti. Then in a separate pan add some olive oil along with the crushed garlic clove and pancetta. You want to cook the pancetta until it goes crispy before adding the wine and allowing it to simmer on a veeeery low heat. I like to take the garlic clove back out at this stage as you want the flavour but at the same time you don't want it to be toooo garlicky.

Meanwhile add the egg yolks, parmesan, cream and seasoning to a bowl and give it a good mix. Have a little taste of the spaghetti to make sure it's pretty much cooked (just use the packet instructions) before draining it and adding it to the pan with the wine and pancetta in. Take the pan of the heat before adding the egg and cream mixture and give it a good tossing (genuinely laughing as I wrote that! - so immature). So, there you have it - just add more cheese and pepper to taste and you're ready to dig in - how quick and easy?!
